About

The Dairy Technology division is one of the major wings among the five divisions of College of Dairy Technology. Ever since this Dairy Technology Programme started in 1983 this division is catering the needs of Dairy Technology students by teaching about procurement, processing, marketing, and quality control aspects of milk and milk products.

After the formation of College of Dairy Technology in July 2008, the Department of Dairy Technology has started functioning independently. This department consists of one Professor, one Associate Professor and two Assistant Professors. At present Dr. Y. Kotilinga Reddy is the Professor and University Head., Mrs.V.Vijayageetha, Assistant Professor, Mr. V. Ravi Varma and Mr. P.Madhusudan are working as Teaching Assistants. The supporting staff consists of two Product Technicians, one Office subordinate, one sweeper and two contract workers. The following are some of the highlights of this Department.

Teaching

B.Tech. (Dairy Technology)

This Department is teaching 11 Courses every year catering to the needs of students by giving fair importance for practical exposure to the students including HTEL and In-Plant Training. This Department is equipped with UHT Pasteurizer, Gulab Jamuns making unit, Ice cream plant, Khoa making machine, Cup curd filling and capping unit, Flavored milk unit, Horizontal sterilizer, Confectionary making unit, Khoa making unit, Fruit pulper, Cheesemaking unit, Form fill sealing machine, Bulk cooler, Walk-in cooler , Homogenizer etc.

M.Tech (Dairy Technology):

The program has been revived and 6 courses are taught for M.Tech (D.T). At present, there are 3 PG students in the department.

Research:

This department is having a PG program. Under this program, about 15 students completed their Master’s degree. The following research topics were undertaken for their thesis work and they were published in reputed journals.

  • Influence of raw milk quality and processing temperature on the shelf – life of UHT milk
  • Freeze Drying of Paneer
  • Process Modification For Manufacturing of Mozzarella Cheese
  • Process innovations for the manufacture of reduced-fat butter spread
  • Development of Functional Foods: Ice – Cream, Shrikhand, Channa Podo, Low-fat Probiotic ice cream.
  • Preparation Of Paneer from skim milk by incorporating Coconut milk
  • Formulation of instant Gulabjamun Mix from Skim milk Powder
  • Process optimization for production of Sandesh, milk cake from cow milk.
  • Preparation of soy-based diabetic frozen dessert, sterilized herbal flavored milk, and Flavored Milk with low-calorie sweeteners.
Income Generation Unit:

This project was started in the year 2001. A revolving fund of Rs.30,000=00 was sanctioned by the University. By utilizing the department facilities the milk is procured from the villages and processed and sold locally. Further, A dairy parlor was established through this stall the processed milk and milk products like Doodh Peda, Gulab Jamun, Fruit juice etc. were sold and 50% profit is remitted every year to the University general fund from the total annual profit. This unit has provided employment opportunities for youth. The details of profit and remittance are as follows:

Earn While You Learn Dairy Products Project:

This was started during the year 1996- 97 to inculcate working knowledge among students by preparing and marketing of milk and milk products using available local facilities and with financial assistance from University with an amount of Rs.10,000/- as the revolving fund. Since 1996 all the students admitted in B.Tech (Dairy Technology) course (who are studying 3rd year) are given the opportunity to participate in this project. The students who are having interest and hard working have been selected and facilities made available for one year. The following income acquired by the students in the respective years was equally distributed to them at the end of the project.

Technical Consultancy Cell

While performing the above activities this department is sharing the expert ideas with the needed young entrepreneurs about the preparation of milk products, Analysis of milk products and establishing small milk depots and bulking cooling centers and other small dairy units.

Training To The Farmers, Women And Unemployed Youth

As a part of extension activity, this department conducted several Training Programs for rural women and unemployed youth in the production of Traditional and Value added Dairy Products for the upliftment of their economic value.

This department is a recognized training centre for the training programme on “Food catering and nutrition to self help group members” sponsored by MEPMA, Tirupati (about 100 women members every week) for the year 2015-2016.

  3. Conducted and organized the one day Training program on “Utilization of surplus milk” for rural women and farmers at Dept. of Dairy Technology, CDT, Tirupati on 03-03-2015.
  4. Conducted and organized the one day Training program on “Utilization of surplus milk” for rural women and farmers at Dept. of Dairy Technology, CDT, Tirupati on 07-02-2015.
  5. Conducted and organized the one day Training program on “Value Added Milk Products” for rural women and farmers at Dept. of Dairy Technology, CDT, Tirupati on 23-12-2014.

Melas:
  1. Dairy and Food Mela-2016: Organized and conducted at the University main gate with the collaboration of other universities and local private Dairies and established the exhibition stalls wherein the products and equipment were kept for the public for Two days i.e 28th and 29th December 2016
  2. Milk Rally- 2016: conducted on the eve of National Milk Day on 26-11-2016 in the streets of Tirupati to bring the awareness for the public about the milk wherein the students and staff of the college actively participated.
  3. World Milk Day Celebrations-2016: Organized one day program and conducted Camp on “Free distribution of Butter milk and Whey Drink” and brought awareness among the public in consumption of milk and milk productson 01st June 2016. “Dairy equipment Exhibition” was conducted.

    Preparation of Innovative Dairy Products for Women” on 01st June 2015 Prizeswere presented to the winners. “Dairy equipment Exhibition” was conducted.
  5. Dairy Foods Festival-2014: Organized Dairy Foods Festival-2014 At main gate andExhibited 80 types of milk products in ” Dairy Products Exhibition” for two days i.eon 14th and 15th November 2014
  6. Dairy Foods Festival-2015: Organized Dairy Foods Festival-2015 At main gate andExhibited 100 types of milk products in ” Dairy Products Exhibition” for two days i.e on 9th and 10th December 2015.
